There is a small, decent wine bar (I think in the B Concourse) that has good sandwiches and salads on the menu. Downside- at peak travel time it is tough to get seated and finish your meal before you have to run and get your connecting flight.

For Philadelphia (PHL) you have some good news and some better news.
The good news is that there is a mall-type food court PAST security for Concourses B & C. Nothing special, mind you, but for one exception, but at least you get a wide choice.

The better news is that there is a branch of a GREAT Philadelphia fine foods store in that concourse: Caviar Assouline. They have an excellent selection of gourmet sandwiches and salads and, if you wish to be the absolute envy of your flight, they'll sell you an ounce of Beluga caviar at a very competitive price. Not to be missed!
