Here is the difference in artistic effort - the first two pictures
are of my dessert and the last is of my wife's. The dessert was "chocolate
and espresso brownie with mango sauce".
The first one even has a light sprinkling of cinnamon.
I believe that the airlines have pictures that are given to the attendants
to show them how to set up and present the different courses. The difference
here in presentation is quite dramatic! I vote for the first presentation!

I do find it strange that Cathay Pacific does not offer a Japanese
meal option on the flights to and from Tokyo from Taipei, and wonder
why this is?

Comments: Nice lunch for a 3 hour flight. The dessert presentation is
evidently highly dependent upon the flight attendant. I had a very friendly
and accommodating male attendant (who was also the chief purser) and
my dessert had a better presentation than my wife's (she had a "not
so attentive" female attendant - service was not the usual for her,
which was odd given that there were several empty seats in the F cabin
for that flight). You can see the difference in effort in the pictures
of the desserts. The entire in-flight experience can be very different
depending on who your FA is!
Mimosa after take-off, with nuts (Champagne was served during boarding).

Asparagus soup with "parmesan custard" and fresh-ground black
pepper.
For the main course, I tried 2 from a choice of 3 from the menu - "stir-fried
king prawns and scallops Szechuan style" and "sauteed chicken
breast stuffed with mushrooms and leek". I didn't try the "beef
sukiyaki style", which was the third option. We didn't feel guilty
about trying a few of the main courses because we were the only 2 in the
cabin, and there was alot of food loaded! Accompaniments with the main
were parsley potatoes (Shimeji rice was also available), and a choice
of western and oriental vegetables.
Cheese plate with 4 kinds of cheeses along with crackers, grapes, celery
and carrot sticks, and a dried apricot. Port wine for drink.

Comments: The 2 FAs on our flight were excellent and very friendly. There
was no amuse bouche served with the pre-departure drinks out of Taipei,
as there was out of Narita (not sure why?) on the previous flight. The
wine tasting was a very thoughtful touch, and this level of service is
why Cathay continues to have so many returning F class passengers. The
FAs never seem to do just the "minimum" required of their job,
they always go beyond expectation! The cabin is also comfortable and quiet,
which makes for a peaceful flight. Well done as always!
"Cathay Delight" signature drink with kiwi, coconut, and mint
(before take-off).
"Pacific Sunrise" signature drink of Champagne, Drambuie, and
orange and lemon zest
(before take-off).
A nice "wine tasting" of 3 different choices from the wine list
(my wife and I were the only two people in first class that flight, so
we got a great deal of personal attention from 2 wonderful FAs!). Served
with cashews.

Comments: Cathay Pacific flights out of Japan have changed alot in recent
months. Now they have done away with hot towels, and just give out the
disposable antiseptic wipes. There were no menus on this sector, unlike
before. So when serving the food the crew used the good old "chicken
or beef?" phrase. Unfortunately they didnt know what they were serving
either.
The salad was the typical lettuce/carrot/raisin mix with salmon. All you
could taste was salmon though. The chicken was chewy and covered in egg?
nobody was quite sure. It was on an enormous mount of plain spagetti noodles,
which was too much considering there were Japanese noodles as well. Extremely
unappetising. The only redeeming point was that there was icecream.

Comments: Excellent service by the FAs in a full cabin of 12. There was
great turbulence during the flight which made taking pictures difficult!
My wife and I were the only 2 to get the soup - they stopped serving it
because it was too bumpy and they were afraid it would spill into someone's
lap! The pre-departure amuse bouche was nice with Champagne. They didn't
offer this on the return lunch from TPE.
Their FAs are the nicest and warmest in the air.

served, from a trolley, is Caviar and Balik Salmon Delight. This consists
of Caviar and Balik Salmon “Tsar Nicolaj” served with warm
new potatoes and crème fraiche. This was followed by a soup of
peas, bacon and mint served with mini garlic baguette. Next a seasonal
salad with orange segment, fennel and radish served with honey mustard
dressing.
There was a choice of four main courses. I chose sauteed Wild Mushrooms
and shrimps with X.O. sauce and steamed rice. Alternatives were: Braised
Lamb Rack with Lamb Jus, roasted Kipfler Potatoes and Vegetables; or poached
Chicken Breast with Tomato and Basil Sauce, boiled New Potatoes with Parsley,
Sauteed Green Peas and Grilled Capsicums; or Sweet Potato and Leek Ravioli
with Tomato Concasse.
After main course, a cheese board was offered together with a choice of
three desserts. I chose the Crème Brule. Alternatives were: Caramel
Ice Cream; or Valrhona Chocolate Tart.
About two hours before landing in Melbourne, breakfast was served. This
consisted of fresh orange juice with fresh fruit consisting of circles
of orange, blood orange, grapefruit wedge, strawberry and blueberries.
For main course, I chose Dim Sum selection. Alternatively, eggs or Quiche
Lorraine was offered together with usual accompaniments of grilled breakfast
steak, pan-fried veal sausages, roast Kipfler potatoes with parsley, vine
tomato and sauteed fresh mushrooms. I also had a cappuccino and croissants.
Drink: Champagne: Cuvee William Deutz 1996. White Wine: Puligny Montrachet
Les Grandes Marches 2002; or Frankland River Chardonnay 2002. Red Wine:
Chateau Branaire-Ducru 1998; or St Andrews Shiraz 1999; or Tignanello
2000.
Comments: Flying Cathay is pure luxury even before leaving the ground,
especially in Hong Kong where they have the finest 1st class lounges in
the world. Enroute from LHR, I took the opportunity between flights to
freshen up in one of the shower suites. These are large spotless bathrooms
lined in black marble. They feature most of the accessories that you need,
although I had to ask for shaving foam which I thought they would have
readily available, but no, I was given shaving cream instead.
Having already had more than sufficient food on the flight from London,
I was not tempted by the delicious food and drinks available in the lounge,
even so early in the day. I am glad I did this because another feast was
waiting for me on the HKG-MEL sector.
Cathay is celebrating 60 years of air travel this year. Their service
experience really shows in 1st class travel which continues to be of the
highest standard. They remain the best airline in the world for obvious
reasons.

attired Flight Attendant welcomes you with pre-takeoff champagne and lobster
medallions to set the mood.
Fairly soon after takeoff, further cocktails are served and orders are
taken for dinner. As always, the first thing served, from a trolley, is
Caviar and Balik Salmon Delight. This consists of Caviar and Balik Salmon
“Tsar Nicolaj” served with warm new potatoes and crème
fraiche. This is followed by sweet corn chowder soup. Next a mixed salad
with roasted beetroot, peppers and tomato with raspberry dressing.
There is a choice of four main courses. I chose steamed Halibut with Soya
Ginger and Spring Onion Sauce, steamed rice and stir-fried Pak Choy. Alternatives
were: Braised Lamb Horopito with Wilted Spinach and Puglia Pasta; or Chicken
Tangine with Apricot and Pistachio Cous Cous; or Mushroom filled Capelleti
with Olive, Tomato Tapenade and Cream Sauce.
After main course, a cheese board is offered together with a choice of
three desserts. I chose the Vanilla Ice cream with Raspberries and Strawberries.
Alternatives were: Rhubarb Tart with Fruit Coulis; or Sticky Walnut and
Date Pudding with Custard Sauce.
Finally, I chose tea and chocolate truffles before retiring.
About two hours before landing in Hong Kong, refreshments and/or breakfasts
are served. These consisted of the usual array of choices, although eggs
were noticeably absent due to concerns about Avian Flu apparently. I chose
fresh orange juice with fresh fruit consisting of wedges of pineapple,
orange, mango, grapefruit, melon and apple. For main course, I chose Wontons
and Pak Choy in Noodle Soup more a snack than breakfast fare, but
I was hungry. Finally, I reverted to form with croissants and cappuccino.
Drink: Champagne: Krug Grande Cuvee. White Wine: Puligny Montrachet Les
Grandes Marches 2002; or Frankland River chardonnay 2002.
Comments: The menu is as delicious as it sounds and the whole dinner affair
is served at just the right pace by friendly Flight Attendants who, although
relaxed, remain service focussed at all times. In such a caring and relaxed
atmosphere it is easy to drift off to several hours of blissful sleep
in fully reclining seats that are the most comfortable 1st class beds
I have ever experienced. Alternatively, the comprehensive VOD IFE system
would keep insomniacs amongst us engrossed for hours. I noticed that unfortunately
with the CX IFE it is not possible to plug in your own headphones, not
in 1st class at least. That is a pity since I am never without my Bose
noise cancelling headphones which are without equal, although CX’s
do a pretty good job also.
Flying Cathay is pure luxury from the moment after check-in, when, even
in the comparatively humble surroundings of their Terminal 3 Heathrow
1st class lounge, you are treated as special guests with a range of tasty
treats such as dim sum, fresh fruits, or finger sandwiches together with
French champagne or other alcohol on tap. Boarding is announced so that
you have just enough time to calmly walk to an uncrowded gate and board
after everyone else is already seated.

I originally am going for the chicken, but after seeing the nice beef
entrée, I change my mind. I guess the trolley service is indeed
a good thing. The beef was juicy and it is a nice meal in general.
Cheese selection includes Blue, Brie and Hard Cheese, and fruit includes
apple, melon, orange and kiwi.
Breadbasket includes garlic bread, soft and wheat rolls. Ice cream selections
include Vanilla, Belgian Chocolate and Strawberry.

Chicken was the soy sauce type… not too special, but good enough
to fill me up after a long day of flying. I was surprised that the whole
pie was once again presented, and the key lime flavor was more popular
than the pecan type on the lunch service. The dessert is a new addition
to daytime North American to HK flight. But my wish for CX in 2006 is
that the elimination of these casserole dishes for at leat the main meal
of a long haul flight... most Asian airlines are slowly eliminating the
casserole dishes and plate the entree individually in the galley. For
a world class airline like CX, it is tijme to change

Comments: Well the featured salad include the usual Mesclun mix with asparagus,
yellow and red cherry tomatoes, as well as the Naturally Fresh’s
lite ranch dressing. It is an okay airplane salad. Then the salmon plate
was nicely presented with slices of smoked salmon, as well a nice gravlax
salmon (cured salmon with basil and herbs). I chose the pork main course,
but there was way too much sauce. The risotto was nice, and the portion
was okay. Cheese selection includes Gorgonzola, Cheddar and a soft milk
cheese (Port Salute), as well as Carr’s crackers. Fruit plate features
watermelon, pineapple, melon, cantaloupe, and grapes. The pecan pie is
nice... better if served warmed with ice cream (hehe... maybe in first
class)
real noodle soup is served as midflight snack now... topped with real
chicken strips and mushrooms... highly recommended

Comments: the seat was so hot and cramp that i didn't really enjoyed the
food at all. the omelette and sausages were nice though. Hashbrowns taste
like it had gone bad. There was only 2 flight attendent for one section
of the economy class. so service was not prompt.
