Route: SIN to AKL, 27 Jan 2004
Flight duration: approx 10 hours
Aircraft type & class: B747-400 'Megatop', Y Class
Business or leisure trip: Leisure
Meal type: breakfast
Fruit appetiser
Strawberry yoghurt
Fried rice noodles with sliced chicken, leafy greens and black mushrooms
Roll, butter and fruit preserve
Drink: OJ, Coffee
Comments: Although this wasn't a full size meal tray
(only about two thirds of the full size) , it was another very satisfying
meal. SQ certainly know how to fill their passengers up! The Y-class service
was again, impeccable...
The noodle dish wasn't at all greasy and filled me up nicely. Presentation
was nice as the dish was topped with a few pieces of red chilli. In the
end, I couldn't finish the meal and had to leave the muffin. It was nice
to get a piece of papaya with the fruits. The papaya was so soft and sweet
and I would have preferred a few more pieces!
Nice to see some shiny metal cutlery with this meal (unfortunately, flights
between SIN and the UK use plastic cutlery). The spoon is so shiny and
you can see the reflection of the windows in it.

Meal type: Mid flight refreshment - Apple...

Comments: This wasn't an official meal service from SQ.
I guess, I can call it a 'self assembled' snack. I couldn't sleep during
the flight and asked the stewardess for a beer. She kindly gave me a beer
with an apple. As I was enjoying the beer, I noticed that dawn was breaking
and we were crossing the state border from South Australia into Victoria.
It was a lovely sun-rise - if I had slept, I would have been unable to
witness it.

Flight duration: approx 10 hours
Aircraft type & class: B747-400 'Megatop', Y Class
Business or leisure trip: Leisure
Meal type: Dinner - (quote from Menu)
Appetiser = 'Fai Cai Yu Sheng', Prosperity New Year Salad with salmon
to usher in the "Year of the Monkey".
Main Course = 'Nian Nian You Yu', Fillet of fish in Oriental golden mushroom
sauce with deluxe vegetables and fried rice
Cheese & crackers / Ice cream / roll & butter
Drink: French white wine, coffee,
drambuie
Comments: I guess that I was lucky to be travelling over
the Chinese lunar new year period because SQ had laid on a special menu
for Chinese New Year. The starter was a raw fish dish that is popular
in Singapore for this festive season. Apparently, tossing the salad (and
I presume, eating it) is meant to bring forth good luck. Unfortunately,
I was unable to find lots of vegetables in my Prosperity salad but no
raw salmon... :-(
Even without the raw salmon, the salad was delicious and it came with
a small carton of dressing which gave it a sweet flavour and a hint of
citrus fruit.
I am unsure of the origins or meaning of the main course but it was steaming
hot and tasty. The fried rice was moist, fish wasn't overcooked and soft.
The vegetables were interesting as they were prepared with some little
black/brown ingredients which resembled worms. I am still puzzled by this
ingredient hence the close-up shot. The Chinese mushrooms were juicy but
I could only find 2 in my dish... Overall, a very appetising main dish.
Ice cream, Cheese and the other components of the meal were good.
I can't remember what wine was served but it was a french chardonnay that
went down nicely with the fish.
I notice that SQ have stopped offering digestifs after the meal... they
do serve you on request and I asked for a drambuie. not sure what the
reason behind this is...

Route: LHR to SIN, 22 Jan 2004
Flight duration: approx 13 hours
Aircraft type & class: B747-400 'Megatop', Y Class
Business or leisure trip: Leisure
Meal type: breakfast
Fruit Appetiser
Cereal with fresh milk
Main Course = Braised Egg Noodles with minced chicken in oriental sauce
and vegetables. (with green chilli and SQ 'Kris Chilli' sauce)
Roll & butter & fruit preserve
Drink: OJ, coffee
Comments: The cereal was one of these pre-packaged things
that had fresh milk included. I don't like raisins so had to pick out
all the raisins from the cereal. Luckily, there were only about 6!! The
main course was a hot noodle dish. The menu said that SQ have 'Kris Chilli',
which is a chilli sauce made to an original SQ recipe... so I tried that.
There was also a small container with green chilli and I sprinkled that
on the dish... Wow...!! I think that I under-estimated the power of the
'Kris Chilli' and for a few moments, my mouth was on fire! It was a good
feeling though...
I think that on the flight in from SIN to LHR, a young child was sat in
my seat. You might be able to see the picture with the coffee cup where
the child had scribbled on the tray table with colour crayons and the
LHR cleaning staff didn't remove the mess from the tray table. I'm not
impressed with the standard of the LHR cleaners. :-(

Mixed Local (Singapore) nuts with pre-dinner drinks.

-and- Stirfried beef and vegetables in Oriental black pepper sauce with
steamed rice

wine,
Comments: This was my first flight with SQ in about 2
and a half years. During this time, I've been flying Y-class with all
the other Star Alliance members... UA / AC / LH / OS / BD / NH.... What
a difference SQ makes. Their Y-class food standards are well above all
the others. Only All Nippon Airlines comes closest to the SQ standard.
Service was again superb. A nice touch is that the pre-meal hot-towel
service uses proper thick cotton face clothes. That makes such a nice
difference.
Appetiser was nothing special but main course(s) was excellent. I had
the Gordon Ramsey chicken first. I think this was my first piece of airline
chicken that was not overcooked - it was moist, succulent and full of
flavour. SQ are one of the few airlines who use a proper china casserole
dish for Y-class main meals. Most other airlines use plastic or foil dishes.
I also tried the chinese style beef dish and that was delicious too.
The British Ice Cream was far too sweet but I finished it...
Coffee was also good. (I don't think SQ use instant coffee in Y-class)
Overall, well done SQ, a refreshing and tasty change from other European
and US airlines.
