Service tradition - Big meal service from CDG:
Aperitif:
choice of cold drinks (OJ pictured) and Fauchon roasted almonds and hazelnuts
Choice of hors d'oeuvre:
Medaillon of duck foie gras and apple chutney
OR
Smoked salmon and shark
Main course pictured: Filet of guinea hen in a tomato sauce, pesto penne
and "fritatta" of mediterannean vegetables
Selection of cheeses (skipped)
Dessert: peach sorbet and cookies,
and chocolate pallet
H20 and coke
I unfortunately did not keep the menu so I can't detail the elements of the dishes, I apologise ... it would have made the descriptions so much more precise. In any case I love the big service out of CDG. Each course is brought out individually and done with such class, as usual. This was our return from LeBourget 2005.
