This was the most exotic dish I have seen in a while. I was a bit taken aback when it was presented to me, for my first reaction was "wow". Being from these parts, I had a fair idea that the main dish was under the purdah (covering). A foreigner might have been baffled. The dish is from the frontier region, i.e. Peshawar or Afghanistan and is a delicacy. The covering was made of flour, top with roasted sesame seeds and pumpkin seeds. The biryani is cooked under the purdah, and retains all the flavours. The dish was absolutely prefect. The mutton was so tender, it simply melted away. I was thoroughly impressed by the efforts and style. Daal was an ideal complement to the dish, and there was a mix of Indian breads too, which included chapati, paratha, or naan.
