Amuse bouche - Cheese sticks to start the meal service.
Appetizer - Terrine of melon and air dried beef served with a melon and port sauce. On the left side you can see a serving of gravlax with dill mustard sauce.
Fillet of cod with a lemon and sesame confit complemented by a saffron and olive oil coulis.
Main dish - Loin of lamb in jus flavoured with thyme accompanied by zucchini provencal - tomato, pepper, onions and herbs.
Cheese plate with selections offered from the cart.
Dessert - Raspberry mousse timbale served with forest fruit coulis.
Snack before arrival - Cheese profiteroles served with Tete de Moine Swiss cheese, followed by gazpacho with basil oil, duck with orange served on a bed of turnip confit flavored with an apple and honey vinegar, and to finish an ile flottante consisting of poached meringue in a vanilla custard sauce with freckles of candied caramel.
Water, wine and port.
Probably the best first class service that I have ever experienced and the benchmark that I use to measure other subsequent longhaul inflight products. The flight attedant saw that I was taking pictures of the meal service so she gave me a whole box of Sprungli chocolates. The service was textbook perfect and stroke the right balance between being soliciting and discreet. Needs were anticipated and nothing was too much trouble. Swiss perfection!
